2 ounces(55g) butter
Pinch of salt
1/4 cup sugar
½ cup milk
1 cup mashed kumara – beauregard or gold
2 – 2 ½ cups self raising flour
Cream butter and sugar. Mix in kumara, egg and milk. Add sufficient flour to obtain scone consistency. Roll out. Cut into squares and place on cold oven tray.
Bake at 180C for 20 minutes.
