Feta & Watermelon Bites:
4 cups of Watermelon
1 pack of prosciutto
100g feta (half a block)
Sprigs of mint, to garnish
Pistachios, crushed to garnish

Rockmelon Canapes:
Half a rockmelon, balled with a melon baller
Mini Mozzarella balls
Springs of mint

Watermelon Slice Canapes:
Half a Watermelon, cut into triangle slices
100g of crumbled feta
Delmaine Balsamic Vinegar glaze
Mint to garnish
Watermelon & Feta Bites:
Cut the Watermelon into 2 – 3cm cubes. Tear the prosciutto into halves. Cut your feta into small cubes.
To assemble, thread onto a skewer, 1 mint leaf, 1 cube of feta, prosciutto and a cube of watermelon. Garnish with the crushed pistachios and enjoy!
Rockmelon Canapes:
To assemble, thread onto a skewer 1 ball of rockmelon, 1 mint leaf and 1 ball of mozzarella. Option to drizzle with a balsamic glaze.
Watermelon Slice Canapes:
To serve, place watermelon slices on a platter. top with crumbled feta, torn mint leaves and drizzle with a balsamic glaze. Enjoy!
