Kumara Waffles with Haloumi & Salad

Salad Dressing

¼ c extra virgin olive oil

2 tbspn lemon juice

1 tsp lemon zest

1 tbspn honey

salt & pepper to taste

Waffles

400g orange Kumara

salt & pepper

1 large free-range egg

150g self-raising flour

50g mixed seeds

50g Tasty cheddar cheese, grated

 

½ telegraph cucumber, sliced

mixed salad leaves

fresh parsley

200g Haloumi, sliced lengthwise

chilli sauce (optional)

Dressing

Combine all dressing ingredients in a small bowl & whisk to combine. Set aside until ready to serve.

Waffles

Scrub clean the kumara leaving skin on. Coarsely grate the kumara and place in a medium bowl with a good pinch of salt and black pepper. Break in the egg, then add the flour and 1 tablespoon of the seeds and mix together thoroughly. The mixture will be very thick. With clean hands divide the mixture into four and roll each into a ball.

Preheat an electric waffle maker or stove top waffle iron. Once hot, add a little grated Tasty cheese into each waffle compartment, then add a ball of the kumara mixture on top. Using a spatula carefully press down the mixture to spread it out evenly. Grate a little more cheese on top, then close the waffle maker and cook for 8 to10 minutes until golden and crisp on both sides. Keep warm in a low oven, and repeat with the remaining mixture.

Whilst the waffles are cooking, heat a non stick frypan and add the sliced Haloumi. Fry until coloured both sides. About 3 mins per side.

To Serve

Place 1 – 2 waffles on each plate, and top with a few salad leaves, parsley, cucumber slices, and 2 slices of cooked haloumi. Pour a little dressing over the salad leaves, and drizzle the chilli sauce over the Halmoui. Followed by a sprinkle of mixed seeds. Serve immediately.

Serves 2 – 4 depending on waffle size. Either 2 small waffles or 1 large waffle per serve
