INGREDIENTS:
Garlic butter
1/3 cup of butter Salted butter
1 -2 Garlic cloves grated
Kumara
6 Medium Kumara
2 tablespoons chopped fresh thyme
2 teaspoons chopped fresh oregano
½ cup of parmesan or tasty, grated cheese
Kosher salt and black pepper
Preheat oven to 200 degrees Celsius
Spray 12 Muffin tins with cooking oil spray.
Kumara – Cut the kumara into thinly sliced pieces.
Garlic Butter – In a small pan melt together the butter and garlic for about 5 minutes.
Kumara– In a large bowl mix together the thinly sliced kumara, Garlic butter, thyme, oregano, and cheese. Grind on some salt and black pepper. Mix well together to coat
Kumara Stack– Layer the kumara evenly in each individual muffin pan putting one on top of another. The Kumara will decrease in size while they are cooking so make sure the kumara is stacked all the way to the top in each individual muffin pan.
Cover the muffin pans in tinfoil and place in the oven. Cook for 40 minutes. Remove the tinfoil and continue to cook the kumara stacks for another 20–25 minutes or until the Kumara is golden brown and tender.
Serve with sprinkle of salt and some black pepper
