Kumara & Soba Noodle Salad

3 small kumara, any colour (600 – 700 g)

2 litres water

1 tsp salt

 

1 packet of Soba noodles (200g)

2 litres water

1 tsp salt

 

Dressing

2 tsp fresh ginger, finely grated

2 garlic cloves, finely crushed & chopped

2 tsp sesame oil

2 limes, juiced

1 tbsp soy sauce

1 tsp brown sugar

 

4 spring onions, finely sliced

½ red chilli, thinly sliced

handful of fresh coriander, torn

sesame seeds

 

salt & pepper to taste

Bring the water and salt to the boil in a large saucepan. Peel and cut the kumara into long thin strips. Alternatively use a spiralizer or grate into longish strips. Add the kumara to the boiling water for around 15 – 20 secs, just to soften not cook through. Drain into a colander and refresh with cold water. Press out any excess water and place into a large bowl.

Bring the water and salt to the boil, sprinkle in the noodles. Once boiling, cook for 3 minutes. Drain and refresh under cold water. Drain again

In a bowl mix together all the dressing ingredients. Combine the kumara and noodles together, then add the spring onions, chilli, and coriander. Adjust seasonings to taste. Serve with dressing and sprinkled with coriander leaves and sesame seeds.
