1kg Original Red kumara
4tbsp butter
2tbsp brown sugar
Method:
Peel or scrub the kumara skins, until clean. Cut into even sized portions and place in a pot of cold water and bring to the boil. Boil for 8 minutes or until soft enough you can poke with a fork halfway through the kumara.
Drain and dry them with a papertowel.
Preheat oven to 180°C. Place the kumara onto a hot preheated roasting dish, be careful not to overcrowd your dish. Melt the butter and stir through the brown sugar. Brush brown sugar mix over the kumara. If it isn’t covering all your kumara…make a second batch of brown sugar & butter. More is always better at this point!
Place dish in the oven for 30 minutes, turning your kumara regularly to make sure they caramelise evenly. Remove from the oven and sprinkle with salt.
