Baked Maple Feta Kumara

1 kg orange Beau Peep kumara, whole &  unpeeled

2 red onions, peeled & each cut into 8 wedges

¼ cup walnuts, roughly chopped

3 tbsp olive oil

3 tbsp maple syrup

1 tbsp dried chili flakes

½ tsp salt

black pepper


½ cup feta cheese, crumbled

fresh parsley & extra chopped walnuts

to garnish

fresh red chili, finely diced – optional

Preheat oven to 220°C fan bake.

Clean the kumara, and place with the onions and walnuts into a large baking pan lined with baking paper. Drizzle with olive oil and maple syrup, and toss till it’s evenly coated. Sprinkle with the dried chilli flakes, salt and pepper.

Roast for 30 – 40 mins, or until the kumara is browned and cooked through. Toss once at around 15 mins mark.

Remove from the oven, and place the kumara mixture on a serving platter. Crumble over feta, extra walnuts and garnish with fresh parsley and chili, if using. Serve immediately.

Serves 6 as a side dish
