Aunty Kay’s Kumara Cake

1 cup wholemeal flour

1 cup flour

2 cups coarse brown sugar

2 tsp baking soda

1/2 tsp salt

2 tsp ground cinnamon

1 cup cooking oil

4 eggs

3 cups grated beauregard kumara

 

Icing:

150g cream cheese

100g butter

2 cups icing sugar

2 tsp vanilla extract

1 round tsp ground cinnamon

1 tsp grated lemon rind

Sift and mix dry ingredients. Add oil and stir well. Stir in eggs and grated kumara.

 

Bake 180C for one hour.

 

Icing: Beat the butter and cream cheese until light and fluffy. Beat in the icing sugar. Add vanilla extract and lemon zest.

 

Ice cake once cooled.
