Owairaka Red Kumara Variety
We thought it time to take a closer look at New Zealands’ most well known kumara, or New Zealand Sweet Potato, variety: The Owairaka Red Kumara.
Originally introduced in the 1800s, Owairaka Red became the backbone of NZ kumara production, and used to make up 90% of kumara consumption in New Zealand. Today, that mix has changed but it’s still recognised as a native variety of New Zealand – one of our best kept secrets!
What makes it different?
Owairaka Red is known for its red veiny centre and purple skin. It’s typically a starchier and drier texture than the Beauregard, or Orange Kumara.
Firmer texture: holds its shape well during cooking
Balanced flavour: not overly sweet, making it versatile to be used in both sweet and savoury dishes.
A taste of New Zealand: what can get more kiwi than using a native New Zealand kumara variety?
Because of its structure, this variety performs best:
Roasting: holds its shape and colour. When cooking with the Owairaka Red, the veiny centre can turn purple. This is perfectly normal and doesn’t affect the eating experience! Owairaka Red kumara is best parboiling until slightly soft when tested with a fork. Drain, then transfer to a roasting pan, drizzle with oil or brush with butter before roasting in a hot oven until crispy and golden.
Warm salads: maintains integrity after cooking. Great for cold salads or when preparing large quantities.
Tray bakes and bulk prep kumara is great for bulking out winter dishes, catering meals or traybakes as they roast well with other vegetables. Kumara also is a great source of fibre and healthy carbs, keeping you fuller for longer!

Grown in the Kaipara region in the north of the North Island, Owairaka Red is still a widely recognised kumara variety we’d love to share more with New Zealanders.
