Kumara & Bacon Chowder


2 tbsp Olive Oil

2 Tbsp Butter

2 Red Onions peeled and diced

8 rashers of Bacon diced

4 large Kumara, cut into small chunks

6 cups of Chicken or Vegetable stock

¼ cup Sour Cream

Salt & pepper and chives


In a large saucepan sweat the onions in oil and butter until soft but not colored. Remove onion from saucepan and then add bacon. Fry until cooked through and a little crispy.

Place onions, bacon, kumara and stock into saucepan and bring to boil. Simmer gently until kumara is very tender.

Add sour cream and season with salt, pepper and chives. Puree.
