Kumara & Mandarin Damper
Ingredients:
3 ½ cups all-purpose flour
2 cups sugar
1 tsp baking powder
1 tsp cinnamon (ground)
½ tsp salt
4 large eggs
1/4 cup mandarin juice (saved from tin)
1 cup vegetable oil
1 cup of cooked mashed kumara (mashed with knob of butter and 2 tsp mandarin juice)
½ tin of finely chopped mandarin segments, drained (save juice)
½ cup of chopped bacon, lightly cooked.
Instructions:
Preheat oven to 180°C. Spray 2 loaf pans.
In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon &
salt. Add eggs, mandarin juice and oil; beat at a low speed with an electric
mixer until smooth. Stir in kumara, mandarin juice and bacon.
Pour batter evenly into greased pans. Bake for 45 minutes - 1 hour, or until a
skewer inserted comes out clean.
Cool in pans for 10 minutes.
Remove from pans, and cool completely on wire racks.
Makes 2 standard size loaves.
