Date & Kumara Scones

Ingredients:

2 Fieldco Kumara, cooked & mashed with a little maple syrup
2 cups flour
4 tsp baking powder
50g butter
¾ cup milk
1 cup dates, finely chopped

 

Instructions:

Sift flour and baking powder into a bowl, cut in the butter and mix together to form breadcrumbs.
Add mashed kumara.
Stir in enough milk to make stiff dough.
Add dates and mix together.
Place dough on a floured surface and gently press out into a slab about 3cm thick.
Cut into 18 small squares.

Bake at 220°C for 12 minutes.
