Kumara Kransky Salad

Ingredients:

3 large kumara, cut into bite size pieces 1 cup baby spinach leaves
3 Tbsp vegetable or olive oil ½ red onion, sliced
Salt & Pepper
2 tsp white vinegar
3 kransky sausages

 

Instructions:

Preheat oven 180°C. Line a baking tray with baking paper. Place kumara in a
large bowl, toss with 1 Tbsp oil, season with salt and pepper. Place kumara on
prepared tray. Bake for 30-35 minutes or until tender.
Meanwhile, heat a frying pan over medium heat. Add Kransky; cook and stir for
3-4 minutes or until browned. Drain on a paper towel.
Place Kransky in a large bowl; toss kumara, onion and spinach. Whisk
remaining oil and vinegar, drizzle over salad. Serve immediately with crusty
bread.
