Kumara Casserole

Ingredients:

Casserole:
1 kg kumara
1 egg
50g butter
1 tin crushed pineapple

Topping:
1 Tbsp brown sugar
1 cup grated cheese
1 Tbsp butter, melted
1 cup cornflakes
½ tsp nutmeg

Instructions:

Boil kumara, mash with butter. Add beaten egg and pineapple (with juice).
Spoon into a 25 x 25cm pie dish.

Mix together topping and sprinkle over kumara.

Bake at 180°C for 30 minutes.
Serves 10 - 12
