Kumara Balls

Ingredients:


8 medium kumara
½ tsp nutmeg
2-4 Tbsp flour
2 Tbsp water
3 Tbsp butter
2 Tbsp brown sugar
Pepper
2 eggs
½ - 1 cup breadcrumbs
Chefade - for frying

 

Instructions:

 

Boil kumara till tender. Drain well, mash adding butter, pepper, sugar and nutmeg.
Beat well until smooth and fluffy then chill.
Shape into balls, using wetted hands, then roll in flour.
Beat eggs and water together and put on a flat
plate. Dip the balls into the egg then roll in breadcrumbs.
Deep fry in chefade for 3-4 minutes or until golden brown.
Drain on paper towels.
Enjoy straight away or cool then freeze for future enjoyment.
