Baked Kumara Medley

Ingredients:

2 gold kumara
2 red kumara
2 beauregard kumara
2 potatoes
Maple syrup
Honey
Salt

 

Instructions:

Peel and chop all vegetables into small 2cm square pieces, place into greased oven dish and drizzle generously with maple syrup & honey. Sprinkle with salt.
Roast in oven 180°C for about 1-1½ hours or until vegetables are cooked through and slightly crispy.
Turn once during cooking to stop them burning on one side only.

Serves 8
