Kumara & Vegetable Filos


1½ cup kumara, cooked & mashed
1 potato
¼ cup peas (optional)
¼ cup corn kernels
½ cup broccoli florets
1 small carrot
2 eggs, lightly beaten
½ cup flour
½ cup milk
Shake of salt & pepper
Filo Pastry (4 sheets)


Pre-heat oven to 180°C, spray 12 hole muffin tin.
Divide pastry sheets into 2 (two sheets thick) and chop into 9 even squares.
Press into tins. Chop potato and carrot into small cubes, put into a pot, and add
peas, corn kernels, finely chopped broccoli florets, boil until just cooked.
Meanwhile, in a bowl add flour and milk then mix until combined, Add eggs,
one at a time, mixing well after each addition.
Add kumara to other vegetables and mix well. Toss carefully to combine.
Divide mixture evenly between pastry cases and bake for 15-20 minutes until
fully cooked. Serve warmed.
