Kumara & Bacon Chowder
Ingredients:
4 large Fieldco kumara
2 Tbsp olive oil
2 Tbsp butter
2 red onions peeled and diced
8 rashers rindless bacon diced
6 cups chicken or vegetable stock
¼ cup sour cream
Salt & pepper and chives
Instructions:
In a large saucepan sweat the onions in oil & butter till softended but not colored. Remove onion from saucepan, and then add bacon.
Fry till cooked through and a little crispy. Place onions, bacon, kumara & stock into saucepan and bring to boil. Simmer gently until kumara is very tender. Add sour cream and season with salt, pepper and chives. Puree.
12 Servings. Freezes well.
